plum cake for breakfast

Breakfast this morning, made from Smitten Kitchen’s recipe, only using 3 tbs of butter instead of 5 (all we had), maple syrup instead of brown sugar (ran out of brown sugar a few days ago), and 1/4 cup olive oil instead of 1/3 cup “flavorless” oil (we’ve only got olive oil).  

We may or may not have just about finished off the entire 8×8 pan.
