Blue corn waffles

About a month ago I picked up a funky old waffle iron from a friend who got a new one.  I finally got around to making waffles this morning, and they turned out surprisingly well given that a) I didn’t use a recipe, 2) I didn’t use gluten, and 3) I didn’t really know how the waffle iron worked.
Here is my super easy, crispy on the outside, waffle recipe made using the assortment of flours I had on hand…
Blue Corn Waffles
1/4 cup rice flour
1/4 cup garbanzo bean flour
1/2 cup blue corn flour
1 tsp baking powder
pinch of salt
1 cup yogurt
2 eggs
1 tsp vanilla


1) Mix flours, baking powder, and a pinch of salt in a medium sized bowl.

2) In another bowl mix eggs, yogurt, and vanilla.

3) Mix ’em all together (don’t overmix!).

4) Oil your waffle iron, and go!

Makes the amount of waffle you see on the iron above (2 big people waffles or 4 small people waffles).
